Ingredients
2 ½ cups oatmeal
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 cup butter, softened
1 cup packed brown sugar
1 cup granulated sugar
1 teaspoon vanilla
250 g Silken Tofu, drained
1 375g package semi-sweet chocolate pieces
Directions
1. In a food processor or blender, process oatmeal until the consistency
of coarse flour. Combine oatmeal, flour, baking powder and baking soda.
Set aside.
2. In a large bowl combine butter, sugars and vanilla until smooth. In
a food processor or blender, process tofu until smooth. Stir into sugar
mixture. Stir in flour mixture, 1 cup at a time, until combined. Stir
in chocolate pieces.
3. Drop by rounded teaspoons on ungreased baking sheet, 2 inches apart.
Bake in a 190°C oven 8 to 10 minutes or until golden around edges.
Makes about 55 cookies.
